Baked Lobster

Preparation Time: 15 minute Total cooking time: 20 minute - Serves four

  • 2 raw large lobster tails
  • 1 small clove garlic, crushed
  • 1/2 cup (125 mL/4 ounces) oil
  • 1/4 CUP(50 mL/2 ounces) brandy
  • 1/4 cup (50 mL/2 ounces) lemon juice
  • Salt and cayenne pepper
  • Lemon wedges for serving

    Preheat the oven to moderately hot 200 C (400 F). Cut the lobste tails in half lengthways with a sharp knife. Combine the garlic, oil, brandy and lemon juice i a bowl. Season the lobster with salt and cayenne pepper and brush with the oil mixture. Place in a baking dish and bake for 15-20 minutes, or until cooked through the flesh will turn white and the shell a deep orange. Baste several times during cooking. Serve with lemon wedges.
