Peppered Lobster Skewers

Makes 4 skewers

  • 1 cup (250 mL) plain yogurt (or strained)
  • 1 tablespoon (15 mL) olive oil
  • 1 tablespoon (15 mL) whole black peppercorns, cracked in plastic bag with mallet
  • 1 teaspoon (5 mL) salt
  • 1 pound (454 g) lobster tail meat (raw, removed from shell and cut into one-inch/2.5-cm pieces)
  • 4 6-inch (15-cm) bamboo skewers, soaked in water for 10 minutes

   Combine first four ingredients. Gently stir in lobster pieces to coat. Cover. Marinate in refrigerator for one hour, stirring twice. Preheat lightly-sprayed electric grill to medium high. Remove lobster and discard marinade. Push lobster chunks on to skewers. Cook for about 8 minutes, turning several times.
