Rhode Island Clam
- 2 eggs, lightly beaten
- 1 cup clams, drained and chopped
- 1 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1 cup milk
- 2 cups flour
- 3 teaspoons baking powder
- Fat or oil for deep-frying.
1. Combine the eggs, clams, salt, pepper, milk, flour and baking
2. Form into small cakes and fry, a few at a time, in a frying basket
in fat or oil heated to 360 degrees. Drain on paper towels.
